All it takes is:
1 cup of all-purpose flour
1-1/2 teaspoons of baking powder
1/2 teaspoon of salt
1/2 cup of shredded cheddar cheese (I used sharp cheddar :)
1/2 cup of milk
2 tablespoons mayonnaise
In a small bowl, combine the flour, baking powder, salt and cheese. Stir in milk and mayonnaise just until moistened. Fill five greased muffin cups two-thirds full. (Make sure you grease them REALLY WELL!) Fill empty muffin cups halfway with water. Bake at 425 degrees F for 17-20 minutes or until golden brown. And that's it!
The only things I would change if I made them again would be to add more salt, some garlic and maybe some oregano...
